I am always looking for good recipes and they are even better if they happen to be slow cooker ones. I feel like sometimes slow cook recipes tend to taste the same and are a bit boring. Last year I discovered this blog called Damn Delicious. The blog is written by this super cute gal, Chungah and she features recipes that are simple, yummy and kid-approved.
She does a lot of sheet pan cooking, which is basically putting your protein and veg on a sheet pan and cooking. It comes out of the oven at the same time and ready to serve. Genius.
The recipe that I want to highlight is her Slow Cooker Cilantro Lime Chicken.
The beauty of this recipe is that you can compile all the fresh ingredients in a ziplock and FREEZE if you are not ready to cook. I used this recipe when I had friends coming down to the lake and didn’t want to spend my time in the kitchen cooking.
Tips: If you are going to use the next day, don’t freeze it. Just keep it in the fridge overnight. If you aren’t going to use it for a few days then you can put in freezer, but don’t forget to defrost the night before. I like to serve this over that yummy yellow Spanish rice and a dollop of sour cream on top.

Tonight I’m making her Slow Cooker Cheesy Bacon Potatoes. Looks yummy, right? I’m going to steam some broccoli to put on top and add sour cream like a deconstructed stuff potato. I’ll be sure to let you know how it turns out.
